So I posted on facebook that rotten bananas + nuts and boredom = banana nut cookies with caramelized frosting, and my dear friends want the recipe so here goes. This recipe came from my Sister in law Julie West Christiansen, she is an amazing cook and never ceases to amaze me with the wonderful things she comes up with. These cookies are soft and have a wonderful texture and the frosting is fabulous!
Banana Nut Cookies
½ Cup Butter ½ Cup Shortening
1 cup Sugar 2 Eggs
½ Cup Buttermilk 1 cup mashed Banana
3 Cups Flour ¼ tsp Salt
1 ½ tsp baking soda 1 Cup Pecans
(If you don’t have buttermilk, use 1 Tbsp lemon juice with ½ cup milk). Cream butter, shortening and sugar. Add eggs, milk and banana. Add dry ingredients. (I added about 1/2 cup of extra flour because I used the 1 Tbsl lemon juice added to regular milk instead of buttermilk) Drop by tsp onto greased cookie sheets and bake at 375 for 10 minutes. Cool and then frost (see frosting recipe below). And actually if I am in a hurry I don't even worry about how cool the cookies are since the Frosting is warm to begin with anyway.
Frosting:
½ Cup Butter
1 Cup brown sugar
¼ Cup milk
Bring to a boil and boil for 2 minutes
Pour into large mixing bowl and with electric beaters add:
2 Cups powdered sugar
I added slightly more than 2 cups, it turned out delicious. These cookies are a big hit. I took them to work and they disappeared very quickly! I think everyone must have liked them.
